Our herb crusted roast beef is a great variation to just a roast of beef, plus it has visual appeal and a crispy flavour. We use an eye of the round roast, but the secret is in the herb-crusted covering.
In a large Ziploc bag, I mix together garlic, dijon mustard, lemon juice, olive oil, worchestire sauce, parsley, basil, salt, pepper, thyme and bouillon powder. Then place the roast in the bag and massage it with the mix until coated and it is ready for the oven.
Roasting beef is a personal choice, but I like to preheat the oven to 325F and cook for 20 minutes a pound or until done to medium. The roast will come out of the oven crusty and herb tasty and will be a delight to your family and guests. Serve with roasted potatoes and baked squash and you have a winner.
